Ingredients

Main Ingredients

  • 1 lb ground beef

  • 4–5 medium potatoes, peeled and diced

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 cup shredded mozzarella or Colby-Jack cheese

  • 2 tablespoons olive oil or butter

Seasonings

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon dried parsley

  • ½ teaspoon dried thyme (optional)

  • ½ teaspoon paprika

Optional Add-Ins (Fall Veggies)

  • ½ cup diced carrots

  • ½ cup diced bell peppers

  • ½ cup mushrooms

Instructions

1. Cook the Potatoes

Heat olive oil or butter in a large oven-safe skillet over medium heat.
Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until lightly golden and just tender.

Remove potatoes from the skillet and set aside.

2. Brown the Ground Beef

In the same skillet, add ground beef and chopped onion.
Cook until beef is fully browned and onions are soft. Drain excess grease if needed.

Add garlic, salt, pepper, parsley, paprika, and thyme. Stir well and cook for 1 minute until fragrant.

3. Combine & Bake

Return the potatoes (and optional vegetables) to the skillet with the beef mixture.
Stir gently to combine everything evenly.

Sprinkle shredded cheese over the top.

Transfer skillet to a preheated oven at 375°F (190°C) and bake for 12–15 minutes, or until cheese is melted and bubbly.

4. Serve

Remove from oven and let rest for 5 minutes.
Serve hot directly from the skillet.
