This Carrot Cake Roll is a soft roll with the flavors of carrots, cinnamon and walnuts, filled with a soft cream cheese and vanilla filling. It’s a modern take on the classic carrot cake, served in an elegant and easy-to-share way. Perfect for Easter, birthdays or an afternoon with friends!
Ingredients:
For the dough (biscuits/sponges):
¾ cup flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
3 large eggs
¾ cup sugar
2/3 cup finely grated carrots
1 teaspoon vanilla extract
½ cup chopped walnuts (optional)
Icing sugar for mixing and rolling
For the cream cheese filling:
200 g cream cheese (at room temperature)
50 g soft butter
1 cup powdered sugar
1 teaspoon vanilla extract
1–2 tablespoons cream or milk (for a softer texture)
Instructions:
Preparing the cookies:
Preheat the oven to 180°C and line a flat baking tray with baking paper (25×38 cm approx.).
In a bowl, mix the flour, baking powder, soda, salt, cinnamon and nutmeg.
In another bowl, beat the sugar until light and fluffy.
Add the grated carrots and vanilla. Mix in the dry ingredients. Add the nuts last.
Pour the mixture into the pan and spread evenly. Bake for 10–12 minutes.
Rolling:
Place a clean kitchen towel on the table and sprinkle with powdered sugar.
As soon as you see the cake from the oven, turn it out onto the towel and remove the baking paper.
First, carefully roll it to pick it up. Let it cool inside rolled.
Cream cheese filling:
Beat the cream cheese and butter until smooth.
Add the powdered sugar and vanilla. Add a little more cream or milk if needed.
Unroll the cooled cake, spread the filling evenly, and roll it again.
Finishing:
Wrap in plastic wrap and refrigerate for 1–2 hours.
Before serving, sprinkle with a little powdered sugar and cut into slices.
Golden Tips
Using additional grated carrots – do not grind them.
Do not overfill – the filling may leak out of the sides when rolling.
Roll it while it is still warm to prevent cracking.
