This is an old family recipe for cucumber tomato salad. We eat it on repeat all summer long. The apple cider vinegar marinade is easy-to-make and SO delicious!

Tomorrow’s salad today! Let it chill and the flavors thrill, getting better with each hour in the fridge.

Time is this salad’s secret ingredient! 24 hours in the fridge and it’s a whole new flavor fest.


3 medium cucumbers, peeled and sliced 1/4 inch thick

1 medium onion, sliced and separated into rings

3 medium tomatoes, cut into wedges

1/2 cup vinegar

1/4 cup sugar

1 cup water

2 teaspoons salt

1 teaspoon fresh coarse ground black pepper

1/4 cup oil

1 teaspoon chopped fresh mint (optional)




Combine all ingredients in a large bowl.

Toss well to mix.

Refrigerate at least 2 hours before serving.
