A classic, creamy comfort food casserole that’s incredibly easy to prepare — just mix, bake, and forget it in the oven!

Forgotten Chicken and Rice is a nostalgic one-dish meal that’s beloved across generations. Made with tender chicken breasts, creamy soups, long-grain rice, and flavorful onion soup mix, it’s the perfect meal for busy weeknights or lazy Sundays. Just toss everything into a baking dish, pop it in the oven, and let the magic happen!

Ingredients
For the Casserole:
4 boneless, skinless chicken breasts

1 cup uncooked long-grain white rice (not instant)

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of mushroom soup

1 ½ cups water or low-sodium chicken broth

1 packet (about 1 oz) dry onion soup mix

Optional: ½ tsp garlic powder, ½ tsp black pepper

Optional garnish: fresh parsley or paprika

Instructions
Prep
Preheat your oven to 350°F (175°C).

Lightly grease a 9×13-inch baking dish.

Assemble
In the baking dish, mix together the uncooked rice, both cream soups, and the water/broth until smooth.

Place the raw chicken breasts on top of the mixture.

Sprinkle the onion soup mix evenly over the chicken.

Cover the dish tightly with aluminum foil.

Bake
Bake for 1 hour and 30 minutes (90 minutes), or until the chicken is cooked through and the rice is tender.

Do not uncover while baking — this is the “forgotten” part! Let it bake undisturbed.

Serve
Remove from oven and let rest for 5 minutes.

Garnish with fresh parsley or a sprinkle of paprika for color.

Serving Suggestions
Serve with steamed green beans, buttered peas, or a side salad

Add a dollop of sour cream on top for extra richness
