What You’ll Need:
30 oz frozen hashbrowns (shredded), thawed
1 can (10.5 oz) cream of chicken soup (or use mushroom for a vegetarian option)
1 cup sour cream
1½ cups shredded cheddar cheese
½ cup melted butter
½ cup chopped onion (optional)
½ tsp garlic powder
½ tsp salt & ¼ tsp pepper
Optional Topping:
1–1½ cups crushed cornflakes or Ritz crackers
2 tbsp melted butter
How to Make It:
Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
In a large mixing bowl, combine soup, sour cream, melted butter, cheese, onion, garlic powder, salt, and pepper.
Fold in the thawed hashbrowns until everything is well coated.
Spread the mixture evenly in the casserole dish.
If using the optional crunchy topping, mix the crushed cornflakes or crackers with 2 tbsp melted butter and sprinkle over the top.
Bake uncovered for 45–55 minutes until hot and bubbly with a golden top.
Let rest for 5–10 minutes before serving — this helps it firm up just enough for perfect slices.
