Butter Pecan Pound Cake

Here’s a classic and delicious Butter Pecan Pound Cake recipe that’s rich, moist, and full of toasted pecan flavor. Perfect for holidays or anytime you want a southern-style dessert.

Ingredients:

For the Cake:

1 cup (2 sticks) unsalted butter, softened

½ cup butter-flavored shortening (or use all butter if preferred)

2 cups light brown sugar, packed

1 cup granulated sugar

5 large eggs, room temperature

3 cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

1 cup whole milk (or buttermilk for a richer taste)

1 tablespoon vanilla extract

1½ cups chopped pecans, toasted

For the Glaze (optional but delicious):

¼ cup unsalted butter

½ cup brown sugar

2 tablespoons heavy cream

½ teaspoon vanilla extract

Pinch of salt

½ cup chopped pecans (optional, for topping)

Instructions:

Preheat oven to 325°F (163°C). Grease and flour a 10-inch bundt or tube pan.

Toast the pecans:
Spread the chopped pecans on a baking sheet and toast in the oven for about 6–8 minutes, stirring once. Let cool.

Cream butter and sugars:
In a large mixing bowl, cream the butter, shortening, brown sugar, and granulated sugar until light and fluffy (about 5 minutes).

Add eggs one at a time, beating well after each addition.

Whisk together dry ingredients:
In a separate bowl, combine the flour, baking powder, and salt.

Alternate dry and wet ingredients:
Add the dry mixture to the butter mixture alternately with the milk, starting and ending with the dry. Mix until just combined.

Stir in vanilla and toasted pecans.

Pour into prepared pan and smooth the top.

Bake for 75–85 minutes, or until a toothpick inserted into the center comes out clean.

Cool in pan for 15–20 minutes, then invert onto a wire rack and cool completely.

Optional Butter Pecan Glaze:
In a small saucepan, melt butter over medium heat.

Stir in brown sugar and cream; bring to a simmer for 2–3 minutes.

Remove from heat, stir in vanilla and a pinch of salt.

Let cool slightly, then pour over the cooled cake. Top with additional pecans if desired.
