Rotisserie Chicken and Stuffing Casserole

Ingredients:
1 rotisserie chicken, shredded (about 4 cups)
1 (12 oz) package stuffing mix (any flavor)
1 cup chicken broth
1 cup cream of chicken soup (store-bought or homemade)
1 cup sour cream
1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1 cup shredded cheddar cheese (optional)
Directions:
Preheat the Oven:
Set your oven to 350°F (175°C).
Grease a 9×13-inch casserole dish and set aside.
Prepare the Stuffing:
In a medium bowl, combine the stuffing mix with chicken broth. Stir until fully moistened, then set aside.
Mix the Chicken Filling:
In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, frozen vegetables, garlic powder, onion powder, salt, and pepper. Mix until well blended.
Assemble the Casserole:
Spread the chicken mixture evenly across the bottom of the prepared dish.
Layer the moistened stuffing mix on top.
If desired, sprinkle shredded cheddar cheese over the stuffing.
Bake:
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for another 10–15 minutes, or until the top is golden brown and bubbling.
Serve:
Let the casserole cool for a few minutes before serving. Pair it with a fresh green salad or steamed veggies for a complete meal.
This casserole is just as good (if not better!) the next day, making it a fantastic leftover option
