These Baby Lemon Impossible Pies are creamy, tangy, and melt-in-your-mouth delicious! Made with just a few simple ingredients, they form their own crust while baking – pure magic! Perfect for dessert, brunch, or an afternoon treat!
You Will Need:
1 can (14 oz) sweetened condensed milk
½ cup fresh lemon juice
2 eggs
1 teaspoon vanilla extract (optional, for extra flavor)
Powdered sugar, for dusting
Lemon slices, for garnish
Instructions:
Preheat & Prep:
Preheat your oven to 350°F (175°C).
Grease a muffin tin or use cupcake liners for easy removal.
Make the Batter:
In a mixing bowl, whisk together sweetened condensed milk, lemon juice, eggs, and vanilla extract until smooth and creamy.
Bake to Perfection:
Pour the mixture evenly into the muffin cups, filling about ¾ full.
Bake for 15-20 minutes, or until the centers are just set (they should still be slightly wobbly in the middle).
Cool & Garnish:
Let the pies cool completely before removing them from the tin.
