  • ¾ cup (100 g) dried cranberries

  • ½ cup (50 g) chopped nuts (optional – walnuts or almonds)

Instructions

Prepare the Dough

In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla extract, mixing until fully combined.

Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.

Add Coconut and Cranberries

Fold in the shredded coconut, dried cranberries, and chopped nuts (if using). Stir gently to distribute evenly throughout the dough.

Shape the Cookies

Preheat the oven to 350°F (180°C).
Line a baking sheet with parchment paper.
Scoop tablespoon-sized portions of dough and place them on the baking sheet, leaving space between each cookie.

Bake

Bake for 12–15 minutes, or until the edges are lightly golden.
Do not overbake—the cookies will continue to set as they cool.

Cooling and Serving

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
