This easy Pineapple Bake is sweet, tangy, and incredibly simple to make with just a few pantry staples. Ingredients:
1 (20 oz) can crushed pineapple, with juice
½ cup granulated sugar
2 large eggs
¼ cup all-purpose flour
½ tsp vanilla extract
½ tsp ground cinnamon (optional)
¼ cup butter, melted
Pinch of salt
Optional: ½ cup breadcrumbs or crushed buttery crackers for topping
Instructions:
Preheat and Prep
Preheat oven to 350°F (175°C).
Lightly grease a 1.5 to 2-quart baking dish.
Mix the Base
In a medium bowl, whisk together the eggs and sugar until well combined.
Add in the flour, vanilla, salt, and cinnamon (if using). Stir well.
Fold in the crushed pineapple with juice.
Pour and Top
Pour the mixture into the prepared baking dish.
Drizzle the melted butter evenly over the top.
