This Hearty Skillet Protein & Veggie Simmer is a wholesome, satisfying dish that comes together in just one pan. Filled with lean ground turkey or chicken, vibrant vegetables, and simmered in a rich, herby tomato broth, it’s a guilt-free comfort food that’s also low-carb, gluten-free, and great for meal prep. Perfect for busy nights when you need something fast, healthy, and delicious.
Ingredients:
1 lb (450 g) lean ground turkey or chicken
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
2 cups zucchini, diced
1 cup bell peppers (mixed colors), chopped
1 cup carrots, thinly sliced
1 can (14 oz) diced tomatoes, undrained
1 tbsp tomato paste
½ cup chicken broth or water
1 tsp Italian seasoning
½ tsp smoked paprika
Salt & pepper to taste
Optional: red pepper flakes, fresh parsley for garnish
Instructions:
Sauté the Base
Heat olive oil in a large skillet over medium heat.
Add onion and cook until soft (about 3 minutes).
Stir in garlic and sauté for 30 seconds.
Cook the Protein
Add ground turkey or chicken to the pan.
Cook until browned and fully cooked, breaking it up with a spoon (about 6–8 minutes).
Season with salt, pepper, and smoked paprika.
Add Veggies & Simmer
Stir in zucchini, carrots, and bell peppers. Cook for 2–3 minutes.
Add diced tomatoes, tomato paste, chicken broth, and Italian seasoning.
Bring to a simmer. Reduce heat and cover. Cook for 10–15 minutes, or until veggies are tender and sauce is thickened.
Finish & Serve
Adjust seasoning if needed.
Garnish with fresh herbs or chili flakes for extra flavor.
Serve on its own or over quinoa, rice, or cauliflower mash.
