Carne Asada Marinade

A bold, citrusy, and smoky marinade for the most flavorful grilled steak!

This Carne Asada Marinade brings bold Mexican flavors straight to your grill. Made with fresh citrus, garlic, spices, and a touch of heat, it transforms flank or skirt steak into juicy, flavorful carne asada that’s perfect for tacos, burritos, salads, or served straight off the grill. Prep it the night before for best flavor!

Ingredients

2 lbs (900 g) flank or skirt steak

For the marinade:
¼ cup olive oil

¼ cup fresh lime juice (about 2–3 limes)

¼ cup orange juice (fresh if possible)

4 cloves garlic, minced

1 jalapeño pepper, seeded and finely chopped (optional)

1 small bunch of cilantro, chopped

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

1 tsp salt

½ tsp black pepper

Optional: 1 tbsp white vinegar or soy sauce for extra tenderness

Instructions

Prepare the Marinade
In a medium bowl or zip-top bag, combine all marinade ingredients.

Mix well until fully combined.

Marinate the Meat
Place flank or skirt steak in a large resealable bag or shallow dish.

Pour marinade over the meat, ensuring it’s fully coated.

Seal and refrigerate for at least 2 hours, ideally 6–8 hours or overnight.

Grill the Steak
Preheat grill or grill pan to high heat.

Remove steak from marinade and pat dry.

Grill for 4–6 minutes per side (depending on thickness), until nicely charred and medium-rare to medium.

Let rest for 5 minutes, then slice against the grain for maximum tenderness.

Serving Suggestions
Serve in warm corn tortillas with guacamole, grilled onions, and salsa
