Perfectly Fluffy Butter Swim Biscuits

These Butter Swim Biscuits are a viral Southern classic for a reason! Made from scratch with pantry staples, they’re unbelievably soft, fluffy, and baked right in a pool of butter. No rolling, no cutting — just mix, pour, and bake! Perfect for breakfast, dinner sides, or soaking up gravy.
Ingredients (Serves 6–8)
2 ½ cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon salt
1 ¾ cups buttermilk (or substitute – see tips)
½ cup (1 stick / 113 g) unsalted butter, melted
Instructions
Preheat & Prep
Preheat oven to 450°F / 230°C
Pour melted butter into an 8×8 inch (20×20 cm) baking dish
Make the Biscuit Dough
In a bowl, whisk together flour, baking powder, sugar, and salt
Pour in the buttermilk and stir until just combined
The dough will be sticky — that’s perfect!
Assemble & Bake
Gently spoon or pour the dough over the butter in the baking dish
Spread evenly and score the top into 9 squares using a butter knife (helps with even baking and cutting later)
Bake for 22–26 minutes, or until the top is golden brown and a toothpick comes out clean
Cool Slightly & Serve
Let cool 5–10 minutes before slicing
Serve warm with honey, jam, gravy, or even as a base for breakfast sandwiches
Tips & Variations
No buttermilk? Mix 1 ¾ cups milk + 1 ½ tbsp lemon juice or vinegar, let sit 5–10 min
Want a garlic version? Add 1 tsp garlic powder and top with parsley or shredded cheese
Don’t overmix! The dough should stay soft and thick — this ensures tender biscuits.
