This Tater Tot Breakfast Casserole is a savory, satisfying dish layered with crispy tater tots, fluffy eggs, melted cheese, and your favorite breakfast meats. It’s easy to assemble, great for feeding a crowd, and even better the next day. Perfect for holiday mornings, weekend brunches, or meal prep!
Ingredients (Serves 6–8)
1 (32 oz / 900 g) bag frozen tater tots
1 lb (450 g) breakfast sausage or bacon (cooked and crumbled)
1 small onion, finely diced
1 cup shredded cheddar cheese
1 cup shredded mozzarella or Monterey Jack cheese
8 large eggs
1 ½ cups milk (whole or 2%)
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Optional: ½ cup bell peppers or spinach, chopped
Instructions
Preheat & Prepare:
Preheat oven to 375°F / 190°C
Lightly grease a 9×13 inch (23×33 cm) baking dish
Layer the Casserole:
Spread tater tots evenly on the bottom of the baking dish
Sprinkle the cooked sausage/bacon over the tots
Add diced onion and any optional veggies
Sprinkle the shredded cheese evenly over the top
Mix & Pour:
In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper
Pour the egg mixture slowly over the layered ingredients in the dish
Bake:
Bake uncovered for 40–45 minutes, or until the eggs are set and the top is golden
Let cool for 5–10 minutes before slicing and serving

Serve with hot sauce, salsa, or sour cream on the side
