Ingredients:
1 cake batter (for a 23 cm – 9 inch pan), ready-made or homemade
¾ cup white sugar (for the caramel)
¼ cup brown sugar
3 large eggs
1½ cups whole milk
½ cup heavy cream
1 teaspoon vanilla extract
1 pinch salt
Optional: whipped cream and melted caramel for serving
Preparation instructions:
Preheat oven to 190°C. Place the cake batter in the pan and prick the bottom with a fork. Bake for 5–7 minutes so it doesn’t get soggy later. Let cool slightly.
In a clean saucepan, melt the white sugar over medium heat without stirring until it turns a dark golden color (caramelized) – about 5–7 minutes.
Carefully add the milk and pan (watch out for the steam!) and stir until the caramel is completely dissolved and the mixture is smooth. Remove from heat.
In a large bowl, whisk together the eggs, brown sugar, vanilla and salt.
Slowly add the warm caramel mixture to the eggs, whisking constantly (this prevents the eggs from curdling). This is called “tempering”.
If you want a super smooth texture, strain the mixture through a fine sieve.
Pour the custard into the baked pastry. Bake in the oven for 40–45 minutes, until the center is set but still slightly wobbly.
Let it cool to room temperature and then refrigerate for at least 2 hours before cutting.
