Amish Applesauce Cake

This old-fashioned Amish applesauce cake is moist, spiced to perfection, and bursting with comforting flavors. A perfect dessert for any season, topped with a simple glaze for extra sweetness.

Ingredients:

For the Cake:

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 eggs

1 teaspoon vanilla extract

1 1/2 cups unsweetened applesauce

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins (optional)

For the Glaze (Optional):

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions:

Preheat oven to 350°F. Grease and flour a 9×9-inch baking pan.

In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

In a large bowl, beat butter and brown sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with applesauce, mixing until just combined.

Fold in nuts and raisins if using.

Pour batter into the prepared pan and spread evenly. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake before serving.
