Hamburger Noodle Soup Recipe
A hearty and flavorful soup filled with veggies and swirls of tender pasta noodles. It’s light enough to cook year-round and easy enough to throw together on busy weeknights.
Ingredients:
2 cups egg noodles (or your favorite sturdy pasta)
1 tablespoon extra virgin olive oil
1 medium onion, diced
1 cup sliced celery
1 cup sliced carrots
2 cloves garlic, minced
1 pound lean ground beef
½ teaspoon oregano
½ teaspoon basil
½ teaspoon seasoned salt
Salt and pepper, to taste
1 envelope dry onion soup mix
3 cups beef broth
1 (28 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 tablespoon Worcestershire sauce (or soy sauce)
¼ cup grated Parmesan cheese
Instructions:
Cook the egg noodles according to package instructions. Drain and set aside.
In the same pot, heat the olive oil over medium heat. Add the diced onion, sliced celery, and sliced carrots, and sauté for about 4-5 minutes until softened.
Stir in the minced garlic and ground beef, cooking until the beef is browned. Drain any excess fat.
Add the oregano, basil, seasoned salt, and a pinch of salt and pepper.
Stir in the dry onion soup mix, beef broth, diced tomatoes, tomato sauce, and Worcestershire sauce (or soy sauce). Bring the mixture to a boil.
Reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally.
Mix in the cooked egg noodles and grated Parmesan cheese. Simmer for an additional 2-3 minutes.
Serve hot, garnished with more Parmesan cheese if desired.
